In the fourteenth century, ginger was the most widely used spice after pepper. Candied ginger was a much-loved confectionery item in the Middle Ages. It is still used in baking in England and Scandinavia. It is the rhizomes of the ginger plant, dried and then ground, which are used to prepare this spice with its camphorous, lemony flavour.
