The island of Phu Quoc is nicknamed ‘the emerald isle’ due to its natural treasures. It is located in the Gulf of Thailand off the coast of Cambodia. The island has belonged to Vietnam since 1945. Pepper growing was introduced there in the 18th century by the Chinese. Pepper production is very select nowadays on the island and is grown in micro lots. In Phu Quoc, 1.5 tonnes is harvested compared to 8 to 10 tonnes in other regions in Vietnam, such as the region of Daklak. The vast majority of the pepper plantations are located in Cua Duang, in the centre of the island. The harvest period runs from February to April. The inhabitants of the island of Phu Quoc call pepper: “Tiêu”. They eat it with seafood or fish. They grind it with salt and then add some lime. It is their local condiment.

    Phu Quoc black pepper is harvested before maturity and then dried in the sun. It has the fragrance of leather and wild and sweet notes. It is the ideal partner for stir-fried foie gras, red meat served with a wine sauce, roasted poultry or a vegetable gratin. It is best to grind it in a mortar.
