The ‘petit-beurre’ butter biscuit is a legendary biscuit. This Albert Ménès butter biscuit is the result of a family recipe handed down through generations. The success of this biscuit lies in the selection of the raw materials (fresh churned butter from Brittany, extra-fresh eggs, Guérande salt), the well-measured balance of ingredients and the skill of the pastry chef. Slow kneading, carried out in several steps, makes it possible to obtain a firm dough which, after rolling, is cut on a rotary machine. Glazed with egg after moulding, the biscuits are placed on flat trays and cooked slowly in the oven.
