These sliced canistrelli biscuits with anise seeds are among the most popular biscuits on the island of Corsica. Integral to Corsican culture, these traditional biscuits are produced in the small village of Appietto in the Cinarca region. They are made with wheat flour and sugar and are perfect for breakfast or a snack. Following traditional methods, the dough is blended in a mixer and then placed in an oven for a first round of baking. Once cooked, the dough is sliced and then baked again, which makes the canistrelli wonderfully crisp.
