Saffron comes from the stigmas of a small flower with purple petals in the Crocus family. Native to Mesopotamia, it was planted in Spain by the Arabs, who gave it the name ‘asfar’, meaning "yellow" in Arabic. These very fragile crocus flowers can only be picked and harvested by hand. Saffron is therefore the most precious spice. It gives dishes the inimitable flavour of a slightly bitter mushroom, both woody and fruity.
