Chutney, a condiment made from spiced fruit or vegetables, is a British speciality that was imported from India by settlers. Its original name, chatni, meaning "strong spices", was adopted. Since then, the recipe has been toned down to make way for a tasty mixture cooked in vinegar, sugar and spices until it has a consistency reminiscent of jam. This recipe uses quality ingredients: cane sugar, wine vinegar, and Alphonso mangoes harvested in India. This variety is often described as the most fleshy (without fibre) and the most fragrant of all.
