Madeleines with olive oil

6 eggs | 300 g sugar | 110 ml milk | 375 g flour | 15 g baking powder | 200 g butter | 222 ml olive oil
1Add the eggs and sugar to a large mixing bowl and stir vigorously. Once the colour lightens, gradually add the milk.
2Mix the flour with the baking powder separately, then add them to the mixing bowl with the eggs and sugar.
3Melt the butter at 50°C, add it to the mixture followed by the olive oil. Mix.
4Butter the moulds and dust with flour. Place the mixture into a piping bag then fill the moulds to the top.
5Bake the madeleines for 7 to 8 minutes in a pre-heated oven at 210°C. Turn them out of the moulds and eat while still warm.
Chef's tip: For a good madeleine dough, let the sugar, egg and milk mixture cool to lukewarm.
