A pepper with personality! Lampong black pepper is grown in the extreme south of the island of Sumatra in Indonesia. It is harvested in the province of Lampong, bordered by the Java Sea on one side and the Indian Ocean on the other. Lampong’s first pepper plants must have been introduced more than ten centuries ago by Indian traders. In the province of Lampong, black pepper is essentially produced, the manufacturing process is simpler than that of white pepper, which requires plenty of water and the suitable infrastructure, such as soaking tanks. Once picked, the fresh green pepper is dried in the sun on mats in front of the wooden houses. With the effects of the sun, the water in the fresh green pepper seeds evaporates. Depigmentation occurs and wrinkles appear. This is how the first black pepper seeds are obtained. Lovers of strong-flavoured peppers will love its woody fragrance, its spiciness and its kick! On the palate, Lampong black pepper has a hot, biting attack. It is best to crush the pepper seeds roughly in a mortar just before tasting to release its minty and exotic woodland notes.
