This unusual little vegetable is a variety of small marrow. Its cream-coloured flesh beneath its soft green skin is crunchy, subtly sweet and reminiscent of artichoke. Its unique shape gave it the nickname "bishop’s hat". These crunchy then soft little custard marrows are picked when very young and prepared immediately after harvesting.
