Cook in a large pan of salted boiling water for 2–4 minutes, stirring once or twice. Drain. Add butter, olive oil, crème fraîche or sauce and stir in immediately. Serve hot on its own or as an accompaniment to all fish and meat. It can also be served cold, in a salad with walnut kernels and chives.
