Petrossian:
3 questions for Mikael Petrossian

 

From caviar to salmon, Kaspiar has made sublime seafood products for over a century. To celebrate the opening of its new stand on the 1st floor of La Grande Épicerie Rive Droite, Mikael Petrossian, grandson of one of its founders, tells us the history of the caviar house. He also presents his iconic products, in store now.

1 - Petrossian has just opened its new counter at La Grande Épicerie Rive Droite. Tell us about your company, renowned for its expertise in caviar since 1920.

"You rightly recall that Petrossian is almost 100 years old!
In the middle of the Roaring Twenties, Melkoum and Mouchegh Petrossian, my grandfather and great-uncle, established Petrossian Caviar. Together, not long after fleeing Tzarist Russia and the anti-Armenian pogroms of the Caucasus, they were the first to introduce the French to this traditional Slavic delicacy... It followed that safeguarding their expertise and offering exceptional caviar was the leitmotiv of every subsequent head of Petrossian, notably during the transition to farming, and naturally that of my father Armen Petrossian, head of Petrossian for over 25 years. So excellence is in the DNA of our family business. Each box of caviar is carefully selected and then matured by our Caviarologues®. Once the precious grains have been chosen from among the best farms, the caviar is conserved and controlled, to be marketed only once it has completely revealed the full panoply of its aromas. That is what makes Petrossian caviar so unique!
 
A French caviar house since 1920, the name Petrossian is synonymous with excellent caviar, but we also offer a wider range of products! Temple of good taste, Petrossian makes delicacies likely to please every gourmet: fish eggs, taramasalata, smoked fish... Since the 1930s, Melkoum and Mouchegh Petrossian perfected a craft process for smoking salmon, which we still use today. Almost a century later, the secret is well kept: the result is unique and incomparable!



2 - Why did you choose La Grande Épicerie Rive Droite for your new stand? More widely, what do you feel is the significance of the partnership between Petrossian and La Grande Épicerie de Paris?

Multiplying the Petrossian experience has always been our ambition. In our Petrossian restaurant on Boulevard de la Tour-Maubourg, for example, we distinguish "caviar absolument", enjoyed pure, alone or with simple and noble accompaniments, from "caviar autrement", a caviar that we cook. Sometimes matured for a long time, dried or well pressed, it is adapted to recipes that are ever more innovative and creative. There are thus a thousand and one ways to savour our caviar. We really enjoy, thanks to this permanently creative approach, continually surprising our most exacting connoisseurs.
 
Adapting what we offer to suit a particular place and clientele is a natural part of our commitment. At La Grande Épicerie de Paris, Petrossian proposes a selection of products adapted to the magnificent space, and a formula both chic and relaxed. We enjoy, for example, delicious caviar croque-monsieurs.
We are, of course, sure that situating ourselves at La Grande Épicerie de Paris and associating two great brands will be a winning combination! We take it as a given, following naturally from the presentation of our products and expertise, taking account of the brand's prestige and celebrity.
 
For us, it is a chance to reach new customers, and to assimilate their demands. Our profession is based on an exchange with connoisseurs so that we can achieve their complete satisfaction.
